Corned Beef Hash and Eggs

I dedicate this post to Marisa Heluk.  A friend and old roomate of mine from JMU who has the same appreciation for good corned beef hash as I do.  Happy Birthday Marisa!

It's a Sunday morning, 2 hours until the Giants kick off and you spent saturday night drinking Grey Goose and watching Goodfellas with your girlfriend.  You have a minor hangover, but know the cure is readily available.  Corned Beef Hash, 2 Easy Over Eggs, Roasted Potatoes, and Rye Toast.  This was better than any diner and it only took about 35 minutes to make and didn't require leaving the house.  The only thing that was missing was some tomatoe juice for a bloody mary.

The key to this breakfast was the runny yolk and crispy bits of the hash.  I prefer my hash to be well done, with an almost burnt crust.  Nothing chaps my ass more than greasy, sloppy hash.  Take pride in your hash and we won't have any problems.

    The roasted red potatos look awesome. I also think the rye bread adds sophistication to the meal. I will also agree with you that CB Hash needs to be slightly crispy, the only places that don't do it right are breakfast buffets.
