Where's the F'n Meat Loaf!?

A few weeks ago Seegs decided that she wanted to make meat loaf for dinner.  Like most people I love a good meat loaf so I was excited for it.  Although medium rare, the meat loaf turned out perfect.  Lot of good flavors mixed in from the cheese, onions, carrots, and salt and pepper, along with this ketchup and mustard sauces that was glazed over the top of it.  She even made some red skinned mashed potatoes with with roasted garlic.  All in all it was a great meal that filled me up.
The best part about meat loaf is the left overs.  Meat loaf sandwiches with ketchup was a classic lunch that I had growing up as a kid the day after my mom made meat loaf.  I took the same approach and made it better.  Taking advantage of the toaster in the kitchenette at work, I brought in some rye bread, American cheese, the left over meat loaf, mashed potatoes, some ketchup, and created an awesome sandwich.  It was a bit messy, but the toasted bread and American cheese mixed great with the previous nights dinner.  Sometimes the best lunches are from past nights dinners.

  1. Try Swiss Cheese instead next time...makes quite a bit of difference.

  2. I will take your word for it. I am not a huge fan of swiss, I try to avoid it when I can, unless it is on a Reuben. I make exceptions for the Reuben. I am more of an American, Cheddar, Provolone, Muenster guy.
